So there we are in Leamington, tomato capital of Canada, where the fruit is so bountiful and the trucks so full of the bountiful fruit that every now and then a little of the load leaps onto the road.
At first we ignore it but we see it again. And again. And eventually we’re compelled to salvage at least one intersection’s worth. Enough for road kill tomato sauce.
This is an intersection’s worth.
Washed, oiled, thymed, salted and peppered.
Roasted a couple of hours until it shmooshes down to an aromatic this…
And then into the freezer until ready to use.
What wine goes with road kill?
