Every year it’s a race to snip a handful of sorrel shoots before the local rabbit gets wind of them.

That and shredded carrot, chopped garlic, dram of olive oil, splash of lemon juice (plus salt & pepper, dulse & kelp, cayenne & turmeric & whatever else you fancy, or not).

And Bob’s your uncle.
